Black Beans

Camellia's Famous Black Beans
1 lb. Camellia Black Beans
8-10 cups water lb. ham or seasoning meat
1 small onion
4 tbs. chopped celery
4 wholw cloves
1 tsp. Worchestershire Sauce
1 pinch sugar
4 tsp. lemon juice
2 tbs. Sherry
1 hard-cooked egg
Sat and pepper to taste

Cooking Directions
Rinse and sort beans. Cover with water, put over low fire, with onion, celery, cloves and meat, cooking about two hours or until beans are very tender. Add more water if necessary. Rub through sieve, or put through blender. Add Worchestershire Sauce, Sherry, lemon juice, salt and pepper. Reheat, add more water if necessary. Garnich with thin slices of lemon and egg.
