Southern Style Baked Beans
1lb Camellia Brand Navy Beans
1 Large Onion, Chopped
1/2 Bell Pepper, Chopped
1 Ham Bone
12 Cups of Water
Salt and Pepper to Taste
Dash Paprika
Dash Garlic Salt
3 Tbs. Tomato Ketchup
2 Tbs. Worcestshire Sauce
1/3 Cup Brown Sugar
1/2 lb. Sliced BaconCooking Directions:
Rinse and sort beans. Cover with water, add meat, onion, bell pepper, paprika, garlic salt, salt and pepper. Cook over low fire about 1 1/2 hours, or until tender. Remove ham bone. Add ketchup, Worcesterchire sauce and brown sugar, mixing lightly. Turn half of mixture into baking dish, put half of bacon strips over this. Turn remainder of mixture into dish, place bacon strips on top. Bake 1 1/2 to 2 hours in 350 degree oven.
Blackeye Peas
1lb. Camellia Blackeye Peas
1/2 lb. Seasoning Meat
1 Large Onion, Chopped
6-8 Cups of Water
1 tbs. Shortening
Salt to Taste
1/2 tsp. Tyme
1 Pinch Sage (optional)
1 Garlic ToeCooking Directions:
Rinse and sort peas. Cover with water, add meat, simmer about one hour. Saute onion and garlic in shortening, add this with other ingredients and cook 1/2 hour, or until soft.
Savory Lentils
1 lb. Camellia Brand Lentils
1 Quart Cold Water
2 Teaspoons Salt
1 Large Onion, Chopped Fine
1/2 Cup Olive Oil or Bacon Fat
Few Drops of Tabasco SauceCooking Directions:
Rinse and sort Lentils. Cover with water and simmer in covered pan about one hour or until tender but not broken. Drain the Lentils and return 1 cup of the liquid to them, or if necessary, add enough water to the liquid to make 1 cup. Cook the onion for a few minutes in the olive oil or bacon fat, add to the lentils, dook for about 15 minutes, and stir gently so lentils are not broken. Add a few drops of Tabasco or more salt in needed.
