<li>Preheat oven to broil.</li>
<li>Spread a single layer of tortilla chips on a sheet pan, and top evenly with dollops of prepared chili and a layer of shredded cheese.</li>
<li>Add another layer of tortilla chips, more dollops of chili, and more cheese.</li>
<li>Place sheet pan under broiler and cook for a minute or two, until cheese is melted and bubbly. Watch carefully, so as not to burn.</li>
<li>Remove nachos from oven, and sprinkle with grape tomatoes, cilantro, green onions, and avocado. </li>
<li>Add a few generous dollops of sour cream, so that nachos can be pulled apart and dipped into the sour cream.</li>

<li class="instruction">In a large Dutch oven, add peas and cover with 8 cups water. Cover and soak for at least 12 hours. Drain excess liquid.</li>
<li class="instruction">In a large Dutch oven, heat oil over medium heat. Add ham; cook until crisp, 10 to 15 minutes. Add bell peppers, green onion, garlic, Cajun seasoning, and salt; cook until vegetables are soft, 10 to 15 minutes.</li>
<li class="instruction">Increase heat to medium-high. Add broth, peas, and bay leaves; bring to a boil. Reduce to a simmer and cook until peas are tender and liquid has reduced by half, 45 minutes to 1 hour.</li>

<li>Rinse dried peas, then add peas and fresh water (enough to cover peas by 2 inches) to a large pot. </li>
<li>Bring to a boil over medium-high heat, then lower to a simmer and let cook for an hour, checking from time to time to make sure that peas do not stick to the bottom of the pot. Add water if needed to ensure that there is always enough water in the pot to cover the peas. After the hour, and when the peas are still firm but can be easily smashed with a fork, drain in a colander and rinse gently with cold water to keep from cooking further. Set peas aside to drain and cool completely, about 15 minutes.</li>
<li>Place cooled peas in a large salad bowl and add sprouts, feta, green onions, parsley, mint and dill.</li>
<li>In a separate bowl, whisk together olive oil, lemon juice, red wine vinegar, honey, salt and crushed red pepper until slightly creamy. Pour over salad and toss gently. </li>
<li>Sprinkle pomegranate seeds on salad and serve.</li>

<li class="li2"><span class="s2">Add onions, bell pepper, celery, garlic and tomato paste to Instant Pot, and sauté until vegetables are soft. </span></li>
<li class="li2"><span class="s2">Add pickled pork back to the pot, along with blackeye peas, water or broth, and bay leaves. Stir well.</span></li>
<li class="li2"><span class="s2">Turn Sauté mode off. Cover Instant Pot, twist to lock the lid, and turn the valve to sealing. Press the Beans/Chili button, or use the Manual mode and set to 30 Minutes.</span></li>
<li class="li2"><span class="s2">When the timer beeps, allow the pressure to release naturally for 20 minutes. Then, turn the valve to venting.</span></li>
<li class="li2"><span class="s2">Remove lid. If a creamier texture is desired, and use the back of a spoon or potato masher to mash peas to desired consistency. Adjust seasonings to taste.</span></li>
<li class="li2">Serve over hot cooked rice with cornbread or hot buttered French bread. Garnish with chopped green onions.</li>

<ul class="ul1">
<li class="li4"><span class="s2">If after cooking, peas are soft but there’s too much liquid remaining, use Sauté mode and cook till thickened.</span></li>

Use Manual mode to cook at high pressure for another 5 to 10 minutes. The pot will quickly come back up to pressure because the contents are already hot.</span></li>

<li class="li1"><span class="s2">Mix together rice, pintos, green onions, and cilantro. </span></li>
<li class="li1"><span class="s2">Mix together all dry ingredients. </span></li>
<li class="li1"><span class="s2">Combine the rice mixture with the dry ingredients, mixing well. </span></li>
<li class="li1"><span class="s2">Add 2 eggs and hot sauce and mix until you have a thick batter. </span></li>
<li class="li1"><span class="s2">Using two spoons, form Calas into oval shapes and drop into the hot oil. </span></li>
<li class="li1"><span class="s2">Brown on both sides then drain thoroughly. </span></li>
<li class="li1"><span class="s2">Serve with a dipping sauce if desired.</span></li>

<ol>
<li>Preheat oven to 400 degrees. With a fork or sharp knife, pierce each sweet potato 5-6 times.</li>
<li>Place sweet potatoes on a foil-lined baking sheet and bake for 45 minutes to 1 hour, or until tender. (If in a hurry, microwave on high for 5-8 minutes.)</li>
<li>When cool enough to handle, cut open sweet potatoes and fluff/mash the insides with a fork.</li>
<li>Top each potato with cooked black beans, Greek yogurt or sour cream, avocado, cilantro, green onions, and pepitas. Squeeze limes wedges over all. Salt and pepper to taste.</li>
<li>Serve immediately.</li>

<li>In a large bowl, combine cooked black beans, corn, bell pepper, green onions, and cooked quinoa.</li>
<li>Pour dressing over mixture and toss well to coat. Salt and pepper generously to taste. Toss again, and serve at room temperature or chilled.</li>

<li>Cook on low heat for 8 hours.</li>
<li>Before serving, remove bay leaves and garnish with green onions. Season with hot sauce or a splash of seasoned vinegar, if desired.</li>
<li>Serve over fluffy white rice.</li>

<ol>
<li>In a large heavy pot, melt the coconut oil over medium heat. Add green onions, garlic, ginger, curry powder, and red pepper flakes; cook for about 5 minutes or until onions have softened and aromatics have released their flavors.</li>
<li>Add the vegetable broth, cover, and bring to a boil.</li>
<li>Add lentils, diced tomatoes, tomato paste, and mushrooms; stir to combine.</li>
<li>Turn down to medium heat, cover, and cook for 10 minutes.</li>
<li>Turn down to low heat, uncover, add coconut milk, then gently simmer for 15-20 minutes, or until the lentils are tender. Season with salt and pepper as needed.</li>
<li>Just before serving, stir in chopped baby kale.</li>
<li>Garnish with chopped cilantro, and serve over rice or with naan or pita bread.</li>

<li><span class="amount">1/2 cup</span> olive oil</li>
<li>Juice of <span class="amount">two</span> large <span class="name">lemons</span></li>
<li><span class="amount">1 tablespoon</span> ground <span class="name">cumin</span></li>
<li><span class="amount">1 tablespoon</span> <span class="name">kosher salt</span></li>
<li><span class="amount">1 tablespoon</span> <span class="name">Creole seasoning</span></li>
<li><span class="amount">1/2 pound</span> <span class="name">tasso</span>, diced small</li>
<li><span class="amount">1 bunch</span> <span class="name">green onions</span>, sliced</li>

<li>Place the red beans in a heavy pot or pot of pressure cooker, rinse, and fill with enough cold water to cover the beans by one inch. Let soak for at least 1 hour, preferably 2-3 hours.</li>
<li>Add onions and garlic.</li>
<li>Cook until very soft. If cooking on the stovetop, be sure to stir occasionally to avoid sticking and scorching.</li>
<li>While the beans are cooking, place the pecans in a food processor and process until a paste is formed. Scrape down the bowl as needed. Reserve to a small bowl for later use.</li>
<li>Allow the beans to cool until they can be safely handled.</li>
<li>Add the beans with cooking liquid, pecan butter, olive oil, lemon juice, cumin, salt, and all-purpose seasoning to the bowl of a food processor and process until very smooth, scraping down the bowl as needed.</li>
<li>Taste and adjust seasoning.</li>
<li>Stir in cubed tasso, reserving a small amount for garnish.</li>
<li>Top with sliced green onions and diced tasso.</li>
<li>Serve with fried pork rinds for additional Cajun flavor.</li>

<li>Optional: Soak red beans overnight. Rinse the beans under cool, running water. Place in a large bowl or pot and cover with several inches of clean water. Let sit overnight. Drain before cooking.</li>
<li>In a large skillet, heat the oil over medium high heat.</li>
<li>Add the trinity, stir well, and cook until vegetables start to soften, about 3-5 minutes. Stir occasionally to ensure that the vegetables don&#8217;t stick.</li>
<li>Add the smoked sausage, stir well, and continue to cook until sausage is browned and vegetables are tender, about 5-7 minutes. Continue to stir occasionally to make sure trinity and sausage aren&#8217;t sticking.</li>
<li>Once done, remove the skillet from heat and transfer contents to slow cooker.</li>
<li>Add water and red beans along with garlic powder, onion powder, bay leaves, and dried thyme. Stir well and place cover on slow cooker.</li>
<li>Set slow cooker on low for 10 hours (or 4 hours on high setting). Stir occasionally.</li>
<li>After eight hours (on low setting) or three hours (on high setting), red beans should be soft. Use the back of a spoon to mash some of the beans against the side of the pot to thicken the beans, for a more creamier style of beans.</li>

<p><strong>Notes</strong>:</p>
<ul>
<li>If you cannot find pre-chopped trinity in your local grocery store, substitute 2 cups of chopped onions, 1 cup of chopped celery, and 1 cup of chopped bell pepper.</li>
<li>Steps 1 through 3 can be done the day ahead of time, if needed. Store the cooked vegetable and sausage mixture in an air tight container in the refrigerator then just pick up on Step 4 when you’re ready to add everything to the slow cooker.</li>
<li>If you’re strapped for time, skip Steps 1 through 4. Sautéing the trinity and the sausage will add a depth of flavor, but it’s not a requirement. If you skip over to Step 5, add the raw vegetables and sausage to the slow cooker with everything else. Omit the vegetable oil.</li>
<li>Depending on your beans and your slow cooker, the beans may have more water than you’re used to on the stove. Instant pot beans will thicken upon standing. Mash some of the beans on the side of the slow cooker crock if you prefer a creamier style of beans.</li>
<li>Your red beans can stay in the slow cooker for another couple of hours on the “Warm” setting. Beans will continue to thicken as they warm longer.</li>

<li>Add the navy beans, three bay leaves, and Creole seasoning to taste to a large saucepot. Add enough water to cover the beans by 3 inches. Bring to a boil and cook, adding additional water as necessary, until beans are soft, about 1 hour. Drain and set aside.</li>
<li>Heat the olive oil in a Dutch oven, preferably cast iron, over medium-high heat. Add the Andouille and cook until brown, about 10 minutes. Add the onion, celery, garlic, oregano, and Creole seasoning to taste; cook until the vegetables are tender and translucent, about 7 minutes.</li>
<li>Crush the tomatoes with your hands over the contents of the Dutch oven before adding them to the pot. Add the 2 remaining bay leaves, Worcestershire, reserved navy beans, thyme, and green onions. Add the chicken broth, and bring to a boil. Reduce the heat to medium-low and simmer until the beans have absorbed the broth, 15 to 20 minutes.</li>
<li>Meanwhile set a low broiler. Combine the Panko, Parmesan, oregano or thyme leaves, olive oil, and salt and pepper to taste. Set aside.</li>
<li>Add shrimp to Dutch oven, and cook until thoroughly pink, 8 to 10 minutes. Top with Panko mixture. Place under broiler and cook until lightly golden, 2 to 3 minutes.</li>
<li>Alternatively, the cassoulets may be broiled and served in individual ramekins.</li>

<li>Using a food processor or the bowl attachment of an immersion blender, puree together onions, tomatoes, ginger, garlic, cayenne, cumin, turmeric, chili powder, and salt.</li>
<li>Add the mixture to a slow cooker with the garbanzos and 4 cups of water. Cook on high for about 9 hours, or until garbanzos are soft.</li>
<li>Add green onions, and cook for additional hour on high.</li>
<li>Stir in chopped cilantro and lemon juice. Serve hot, over rice if desired.</li>

<ol>
<li>Heat 1 tablespoon olive oil in heavy large pot over medium heat. Add onion, potato and carrot; sprinkle with salt and pepper. Cook approximately 4 minutes, stirring occasionally.</li>
<li>Add half of chopped garlic; stir until vegetables are soft but not brown; about 4 minutes longer.</li>
<li>Add 2 tablespoons curry powder; stir about 1 minute.</li>
<li>Add lentils and 4 cups water. Sprinkle with salt and pepper.</li>
<li>Increase heat and bring to a boil. Reduce heat to medium and simmer until lentils are tender (about 30 minutes).</li>
<li>Puree garbanzo beans, lemon juice, ¼ cup water, 2 tablespoons olive oil, and rest of garlic in blender or food processor.</li>
<li>Add garbanzo bean puree and butter to soup. Season to taste with salt, pepper, and curry powder.</li>
<li>Add water if needed for thinner consistency. </li>
<li>Sprinkle with thinly sliced green onions and serve with lemon wedges.</li>

<li>Bring the lentils and broth to a boil, then cover &amp; simmer for 25-30 minutes until soft but not mushy. </li>
<li>While the lentils cook, sauté the green onion, peppers, garlic, chili powder and cumin in vinegar till the vegetables are limp (about 2 minutes).</li>
<li>Add tomato sauce and molasses, cook for 1 minute (scrape the stuck pieces off the pan), taste, and add more vinegar if needed.</li>
<li>Add mixture to lentils and cook until heated through.</li>
<li>Serve over rice, or as a burrito or taco filling.</li>

<ol>
<li>Rinse and sort peas.</li>
<li>Discard any skin on salt pork.</li>
<li>Cut salt pork or bacon into 1/3-inch pieces, and cook in a heavy pot over moderate heat, stirring occasionally until fat is rendered, and salt pork or bacon is crisp and golden, about 6-8 minutes.</li>
<li>Transfer salt pork or bacon to a paper towel-lined plate to drain. Pour off all but 1 tablespoon fat, and cook onions in fat over moderate heat until softened.</li>
<li>Add garlic and cook, stirring for 1 minute.</li>
<li>Stir in peas and broth, and simmer uncovered until peas are tender, about 1 hour.</li>
<li>Stir in scallions and salt and pepper, to taste.</li>
<li>Serve over rice, and sprinkle with salt pork or crumbled bacon.</li>
