<li><span class="amount">6 cups</span> <span class="name">water</span>, plus extra as needed</li>

<ol>
<li>Rinse beans thoroughly, then place in a clean, medium-size cooking pot. (Important: the pot must be free of any oil or oil residue, as oil will break down the aquafaba and render it useless.)  </li>
<li>Cover beans with water and soak for at least 4 hours, but preferably overnight. (Add extra water if needed – just enough to keep beans covered while soaking.)</li>
<li>Transfer pot of soaked beans to stove and bring to a boil over high heat for 10 minutes, then cover and reduce to a low simmer, allowing beans to cook until tender, approximately 2 hours. (Time can vary depending on type of bean; refer to package instructions.) Beans should continue to be submerged; add small amount of water if necessary.</li>
<li>Using a slotted spoon, remove cooked beans from pot and allow remaining liquid (this is the aquafaba) to cool. You should have about 2  cups of aquafaba, with a viscosity (thickness) that is slightly looser than egg whites. If you have more than 2 cups and/or the liquid seems too thin, place the liquid back in the pot and boil over medium-high heat to reduce it to a consistency closer to egg whites, approximately 10-25 minutes (depending on the volume of liquid). </li>
<li>Allow aquafaba to cool before use. Cover and store in refrigerator for up to 7 days or freeze for up to a month.</li>
</ol>
<h4>For Whipped Aquafaba:</h4>

<ol>
<li>Allow aquafaba to cool completely in the refrigerator.</li>
<li>Add aquafaba and ¼ teaspoon cream of tartar to the bowl of a stand mixer.</li>
<li>Whip on high speed until you achieve desired stiffness of peaks, about 5 minutes for semi-soft peaks and 10-15 minutes for stiff peaks.</li>
<li>Whipped aquafaba can be covered and stored in refrigerator for up to 2 days but is best when used immediately.</li>
</ol>
<h4>Tips and Advice:</h4>

<ol>
<li>Always use an extra-clean, unoiled bowl and utensils for aquafaba recipes. Oils interact poorly with the aquafaba, particularly if you’ll be whipping it later on</li>
<li>As a general rule, 3 tablespoons of aquafaba is equal to one whole egg, while 2 tablespoons is equal to one egg white.</li>
<li>Use an ice-cube tray to freeze individual servings of aquafaba for future use.</li>
<li>Do not ever salt or season your beans while cooking them for the aquafaba! </li>
<li>When making any kind of whipped aquafaba, cream of tartar helps to make stiffer peaks a greater possibility.</li>

<li class="li1"><span class="s1">Add the beans, ham hock or seasoning meat, and enough water or broth to cover the beans.</span></li>

<li class="li1"><span class="s2">Press the Sauté button on the Instant Pot, and add the oil. Add chopped onion and vegetables, and sauté until soft. Add garlic, and sauté 1 minute more.</span></li>
<li class="li2"><span class="s2">Add broth, beans and red pepper flakes; stir well. </span></li>
<li class="li2"><span class="s2">Turn Sauté mode off. Cover Instant Pot, twist to lock the lid, and turn the valve to sealing. Use the Manual mode and set to 30 Minutes.</span></li>
<li class="li2"><span class="s2">When the timer beeps, allow the pressure to release naturally for 20 minutes. Then, turn the valve to venting.</span></li>
<li class="li2"><span class="s2">Remove lid. Set to Sauté mode, and stir in greens, vinegar, salt and pepper. Cook until greens are wilted (1 minute for spinach or watercress, and up to 20 minutes for collards or chard).</span></li>
<li class="li1"><span class="s2">Serve hot.</span></li>

<li class="li5"><span class="s2">If after Step 5, beans are not soft enough, </span><span class="s3">put the lid back on and make sure the release valve is set to sealing. Use Manual mode to cook at high pressure for another 5 to 10 minutes. The pot will quickly come back up to pressure because the contents are already hot. Then continue with Step 6.</span></li>

<li>To a large pan, add olive oil and leek, and sauté for 5-6 minutes or until very soft.</li>
<li>Add garlic and carrot, and sauté for 2-3 minutes.</li>
<li>Add mushrooms and white wine, stir to combine, and cook for 2 minutes.</li>
<li>Add tomatoes, tomato purée, cooked lima beans, balsamic vinegar, salt, pepper, thyme, and chili flakes. Simmer for 7-8 minutes, until tomatoes have softened. Set mixture aside and keep warm.</li>
<li>To make the cheese grits, bring chicken broth, milk, water, and salt to a boil in a medium saucepan over medium-high heat; once boiling, gradually whisk in grits. Reduce heat to low, and simmer, stirring occasionally, 10 minutes, or until thickened.</li>
<li>Stir in Cheddar cheese, Parmesan cheese, hot sauce, pepper, and butter until melted and smooth.</li>
<li>Ladle grits into bowls, and top with ragout.</li>
<li>Garnish with shaved Parmesan, fresh parsley, and/or fresh thyme.</li>

<p>1. Warm 2 tablespoons of grapeseed oil in a large skillet on medium heat.</p>
<p>2. Add the garlic to the oil, and fry until it begins to turn golden, about 30 seconds. Be very careful not to burn it.</p>
<p>3. Add the beans, and stir. Cook until they begin to char and brown.</p>
<p>4. Remove the beans with a slotted spoon, leaving as much of the garlic behind as possible. Set the beans on a plate.</p>
<p>5. Add the mustard greens and ¼ cup of water to the skillet, and stir. Cook until the greens are tender, about 10 minutes on medium heat.</p>
<p>6. Season to taste with salt—start with ¼ teaspoon—and pepper. Serve the greens topped with the pan-fried butter beans.</p>

<ol>
<li>Rinse and sort lima beans. Soak beans overnight with enough water to cover by 2 inches. (You can skip this step, but may need to add more liquid when cooking, and cook the beans longer.)</li>
<li>When ready to cook, soak dried mushrooms in 2 cups hot water for about 20 minutes. Remove mushrooms, and save the resulting mushroom broth (that has now turned a tea-like color).</li>
<li>Chop mushrooms into roughly 1-1/2 inch bite-sized portions and reserve.</li>
<li>Add olive oil to a large pot over medium heat, and sauté onion and celery with a pinch of kosher salt and the black pepper, cooking until translucent, about 5-7 minutes. Add shallot and garlic, and cook another minute.</li>
<li>To the pot, add reserved chopped mushrooms, reserved mushroom broth, vegetable stock, and drained beans, and bring to a boil. Add bay leaves and soy sauce and stir all.</li>
<li>Bring to a boil, then cover and simmer until beans are tender, about 1 1/2 hours. Season to taste.</li>

<li>Remove visible fat from duck (or chicken) and sprinkle evenly with 1 tablespoon Poultry Magic®, patting it in.  In a paper bag, mix flour with 1 tablespoon Poultry Magic®. Dredge duck pieces in the flour. Shake off excess. Put remaining flour aside.</li>
<li>Heat 3/4-inch chicken fat in a large skillet to 350°. Fry the duck (skin side down and large pieces first) in the hot oil until brown, 3-6 minutes per side. Be sure oil stays at 350°. Drain on paper towels, Set aside skillet with oil.</li>
<li>Place the duck pieces in a large ungreased roasting pan. Bake at 375° until tender, about 40 minutes.</li>
<li>Meantime, season the pork and lamb chops with 1 1/2 teaspoons Meat Magic®. Dredge in the reserved seasoned flour. Reheat the oil to 350°. Brown the pork, lamb, ham (if used) and andouille, about 2 minutes per side. Drain on paper towels and set aside.</li>
<li>When the duck is tender, remove pan and stir to loosen any sediment sticking to the pan bottom. Add the stock, tomatoes, onions, bell peppers, celery, garlic and 1 tablespoon Meat Magic® to the pan. Stir well. Add the drained beans, pork, lamb, tasso and andouille; stir until well mixed and most of the beans are in the liquid. Return to oven and continue baking until the beans and the duck are tender, about 1 1/2 hours, stirring every 15 minutes or so, and more often toward the end of cooking time. Adjust seasoning with Meat Magic®. Serve immediately with rice.</li>

<li>Place the beans in a large stockpot and add 6 cups water, the ham bone, hog jowl, onion, garlic, and chili pepper.</li>
<li>Slowly bring to a boil over medium-high heat.</li>
<li>Reduce the heat to low, cover tightly, and simmer for 40 to 60 minutes, stirring occasionally.</li>
<li>If the beans look dry, add enough water to keep them covered by 1 inch water. The longer the beans simmer, the thicker the broth will become. Do not skim off the fat.</li>
<li>Salt and pepper to taste.</li>

<li>In a saucepan, cover beans with water, and bring to a boil. Reduce to a simmer, and cook until beans are tender. Drain beans, reserving cooking liquid, and set both aside.</li>
<li>Heat oil in a saucepan. Cook onions and green chili until onions are translucent.</li>
<li>Add ginger-garlic paste to saucepan, and stir until well-blended.</li>
<li>Add tomatoes and cook for 5 minutes.</li>
<li>Add turmeric, chili powder, coriander or dhania powder, channa masala or chicken masala seasoning and sauté for one minute.</li>
<li>Add cooked beans and reserved cooking liquid.</li>
<li>Simmer 5-10 minutes, or until well blended. Garnish with coriander leaves and ghee.</li>

<li>Add puréed beans to a large bowl, and mix in remaining ingredients until well blended.</li>
<li>Cover and chill for at least 4 hours.</li>
<li>Serve by spreading on toasted bread slices or crackers.</li>

<li><span class="amount">1 tablespoon</span> <span class="name">brown sugar</span></li>
<li><span class="amount">1 tablespoon </span><span class="name">poultry seasoning</span></li>
<li><span class="amount">1/2 cup</span> <span class="name">reserved bean liquid</span></li>
<li><span class="amount">1 1/2 teaspoons</span> <span class="name">salt</span></li>

<ol>
<li>Rinse and sort beans. (<em>Optional: Soak beans using your <a title="How to Soak Your Beans" href="http://www.camelliabrand.com/how-to-soak-your-beans-2/">preferred method</a>.</em>)</li>
<li>Add beans to large, heavy pot and cover with water. Bring to a boil; reduce heat and simmer until beans are tender. Drain beans, reserving 1/2 cup of bean liquid. Set both aside.</li>
<li>In a skillet, brown ground beef and chopped onion. Add remaining ingredients to skillet, and stir well. Preheat oven to 350ºF.</li>
<li>Place cooked beans in the bottom of a casserole dish, and cover beans with beef and onion mixture. </li>
<li>Bake casserole at 350ºF for 30 to 35 minutes.</li>

<li>In a heavy skillet over low heat, cook ham or seasoning meat for 10-12 minutes; this will render the meat and create the grease needed for Step 3. Remove ham or seasoning meat, and set aside.</li>
<li>In skillet grease, sauté onion, garlic, parsley and celery.</li>
<li>In large heavy pot, cover beans with water and bring to a boil. Reduce heat to a simmer, and add sautéed vegetables, ham or seasoning meat, and bay leaf to pot. Simmer for 1 1/2 hours, or until beans are tender, stirring occasionally. Add water as necessary.</li>
<li>Remove bay leaf, add salt and pepper to taste and serve.</li>
