<li>In a medium bowl, whisk together mustard, vinegar, honey, salt, garlic, black pepper, and red pepper. Whisk in oil in a slow, steady stream. Add cooked, cooled peas and onion, stirring until combined. Cover and refrigerate for at least 1 hour or overnight. </li>
<li>Stir in Parmesan and parsley. On a serving platter, arrange tomato slices. Spoon pea mixture on top of tomatoes. Garnish with additional parsley leaves and crushed red pepper, if desired.</li>

<li><span class="amount">2 </span> <span class="name">large carrots,</span> finely chopped</li>
<li><span class="amount">4 cloves</span> <span class="name">garlic,</span> minced</li>
<li><span class="amount">1 teaspoon</span> <span class="name">kosher salt</span></li>
<li><span class="amount">1 teaspoon</span> <span class="name">freshly ground black pepper</span></li>

<ol>
<li>In a large Dutch oven, bring beans and 8 cups water to a boil over medium-high heat. Reduce heat to medium; gently boil beans until tender and most of liquid is evaporated, stirring occasionally, 45 minutes to 1 hour. Drain beans. Wipe out Dutch oven.</li>
<li>In the container of a blender, combine 2 cups cooked beans and 1 cup broth; process until completely smooth.</li>
<li>In the same Dutch oven, heat oil over medium heat. Add onion and carrot; cook until softened, stirring occasionally, 6 or 7 minutes. Add garlic, salt, and pepper; cook for 2 minutes. Add cooked beans, chickpeas, and rosemary. Stir in puréed bean mixture and remaining 5 cups broth. Bring to a boil; reduce to a simmer and cook, uncovered, until soup slightly thickens, 20 to 25 minutes. </li>
<li>Stir in collards and cook for 20 minutes. Stir in lemon zest and juice. Gradually sprinkle in Parmesan, stirring constantly (don’t add cheese all at once or it may clump). </li>
<li>Garnish with additional rosemary, zest, and Parmesan, if desired. Serve with bread.</li>

<p>1. Crack egg in a large bowl and beat well. Add beans and stir. With a potato masher, mash beans until relatively smooth, but with some texture remaining.</p>
<p>2. Add cooked rice and stir to distribute evenly. Stir in garlic, tomatoes, lemon juice, basil, flour, Parmesan, salt and pepper. Mix until well combined. This may be easier to do with your hands.</p>
<p>3. Roll small handfuls into eight balls. If mixture is too wet to hold together well, add more flour, a tablespoon at a time. If it’s too dry, add the white of another egg, or a whole egg, if needed.</p>
<p>4. Press each ball to form a patty about 2-1/2 to 3 inches wide. (At this point, patties can be stacked on a plate, covered and refrigerated to cook up to four hours later.)<span class="Apple-converted-space">   </span></p>
<p>5. In a large skillet, heat olive oil and butter over medium heat. Cook patties a few at a time, about 3 minutes on each side, until golden brown. Transfer to a bun or onto a salad.</p>
<p>6. Any remaining patties can be refrigerated in zip-top bags or airtight containers. <p>1. Prepare pasta in boiling salted water according to package directions. Drain and reserve 1 cup cooking liquid.</p>
<p>2. Place warm pasta in a large bowl. Add pesto and mix well. Add cooking liquid, 1 tablespoon at a time, to reach the desired consistency of a creamy sauce.</p>
<p>3. Add beans. Toss gently, so beans remain intact. Taste for seasoning and adjust if necessary. <li>Cook and drain the beans, and allow to cool.</li>
<li>In a large bowl, add mayonnaise, Dijon mustard, lemon juice, anchovy paste, Parmesan cheese, and garlic, mixing well.</li>
<li>Fold in beans, salt, pepper, and chopped parsley — reserving a small amount of parsley for garnish.</li>
<li>Mix ingredients well, but gently, to avoid breaking beans.</li>
<li>Refrigerate for at least one hour, but overnight will produce an even richer flavor.</li>
<li>Serve with slices of a toasted baguette or other hearty bread, and garnish with more chopped parsley.</li>
