<li>1 cup crumbled Parmesan cheese</li>

<ol>
<li>In a medium bowl, whisk together mustard, vinegar, honey, salt, garlic, black pepper, and red pepper. Whisk in oil in a slow, steady stream. Add cooked, cooled peas and onion, stirring until combined. Cover and refrigerate for at least 1 hour or overnight. </li>
<li>Stir in Parmesan and parsley. On a serving platter, arrange tomato slices. Spoon pea mixture on top of tomatoes. Garnish with additional parsley leaves and crushed red pepper, if desired.</li>

<li><span class="amount">1 clove</span> <span class="name">garlic</span>, minced</li>
<li><span class="amount">1 tablespoon</span> <span class="name">smoked paprika</span></li>
<li><span class="amount">1/2 teaspoon</span> <span class="name">kosher salt</span></li>
<li><span class="amount">1/4 teaspoon</span> <span class="name">ground black pepper</span></li>
<li><span class="amount">1/2 cup</span> <span class="name">vegetable oil</span></li>
</ul>

<h3>Directions:</h3>
<ol>
<li>Rinse and sort peas, and place in a large bowl. Add water to cover by 2 inches. Cover bowl, and let stand overnight. Drain peas.</li>
<li>In a 3-quart saucepan, add peas, vegetable stock, and salt; bring to a boil over medium-high heat. Reduce heat to medium-low, and simmer for 2 hours or until peas are tender. Drain and rinse with cold water. Chill until ready to use.</li>
<li>To make dressing: In a medium bowl, mix together vinegar, sorghum, garlic, paprika, salt, and pepper. Slowly whisk in oil.</li>
<li>In another medium bowl, combine cooked peas, corn, tomatoes, bell pepper, celery, and onion. Toss with desired amount of dressing, and chill for at least 1 hour. Just before serving, stir in parsley and bacon.</li>

<li>Rinse and sort beans. Cover and soak beans in water for at least 4 hours or overnight.</li>
<li>Preheat the inner pot of an electric pressure cooker using the Sauté setting on Normal.</li>
<li>Add ground sausage and break up the meat with a spatula, stirring occasionally. Continue cooking until sausage is browned, about 6-8 minutes.</li>
<li>Add onions and garlic and continue cooking until the onions are softened and translucent, about 5 minutes more.</li>
<li>Drain water off soaked beans and add beans to the pressure cooker.</li>
<li>Add chicken broth, tomato sauce, celery, carrots, salt, and Italian seasoning.</li>
<li>Lock the lid of the pressure cooker in place, and set the steam vent to Seal.</li>
<li>Select Pressure Cook (Manual), and cook for 15 minutes on High Pressure.</li>
<li>Press Cancel and allow pressure to release naturally before carefully removing the lid.</li>
<li>Stir cooked pasta into soup.</li>
<li>Season to taste, and top with fresh chopped basil and Parmesan cheese, if preferred.</li>

<li>In a large pot add about 5 cups water and a teaspoon of salt to the dried baby lima beans, bring to a boil, reduce heat, and simmer until the beans are tender, about 90 minutes. Add water to keep the beans covered if needed.</li>
<li>While the beans are cooking, make the pickled onion and celery so they can sit for a while. Combine one chopped red onion and the celery in a heatproof bowl and pour over enough boiling water to cover. Let them sit for about 5 minutes, then drain. Mix 2 tablespoons of the honey and a teaspoon of salt with the vinegar and add to the onion-celery mix. (If your beans are already cooked, let these sit for at least 15 minutes.)</li>
<li>
<p>Heat a heavy skillet on medium heat to cook the other red onion with a pinch of salt  in the olive oil. Cook, stirring occasionally, until the onion is deeply caramelized, at least 30 minutes. Add a little water if the onion looks like it’s burning but isn’t completely browned.</p>
</li>
<li>Roast the red bell pepper. If you have a gas range you can put the pepper directly on a lit burner and use tongs to turn it until the skin is mostly blackened. Or roast it whole in a 350°F oven until the skin is beginning to darken, about 30 minutes. Let cool, pull out the stem and seed core, and peel off as much of the outer skin as possible (it’s fine to leave some if it doesn’t come off easily). Chop into roughly ½ inch pieces. Save as much of the liquid from the pan as possible; a few seeds are okay, too.</li>
<li> Use a large bowl to combine the cooked lima beans, the caramelized onions (and any oil from cooking them), and the roasted red pepper, along  with any of its cooking liquid. Drain and reserve about half of the vinegar-honey mix (save it for salads) from the pickled onion and celery, then add the vegetables. Add the chopped mint, mix well, taste, and add salt if needed. Serve at room temperature.</li>

<h4>Make Aquafaba Mayonnaise:</h4>
<ol>
<li>Combine aquafaba, mustard, vinegar, pepper and salt in a small mason jar (or the jar that often comes with an immersion blender).</li>
<li>Add oil on top and allow to sit and separate for at least 2 minutes.</li>
<li>Using an immersion blender placed all the way down toward the bottom of the jar, blend for 25 seconds, or until you see the mayonnaise beginning to fluff up and form.</li>
<li>Slowly raise the immersion blender to the top of the jar until the mixture is consistent (like mayonnaise).</li>
<li>Turn off the immersion blender before removing it from the jar.</li>
</ol>
<h4>Make Potato Salad:</h4>
<ol>
<li>Clean and trim potatoes, keeping skins but removing any eyes. In a medium pot, place potatoes, cover with water, salt the water liberally and bring to a boil. Cook until fork-tender, about 15 minutes.</li>
<li>Remove potatoes from water and set aside to cool; drizzle them with vinegar.</li>
<li>Chop cooled potatoes into ¼-inch pieces.</li>
<li>Place potatoes, aquafaba mayo, mustard, scallions and basil in a medium bowl and mix until combined. Fold in chopped egg, if desired.</li>
<li>Garnish with paprika and serve immediately. (Potato salad can be covered and stored in refrigerator for up to 3 days.) </li>

<li>To a large heavy bottomed pot add garbanzos and water. Cover with a lid. Bring the water to a boil, which will take about 10 minutes, lower the heat and cook for about 2 hours on medium low heat until the garbanzos are tender. Drain the garbanzos and refrigerate until completely cold. You&#8217;ll only need 4 cups of cooked garbanzos for this salad: freeze the rest or turn into hummus!</li>
<li>In a large bowl combine 4 cups of cooked garbanzos with corn, cucumbers, tomatoes, olives, lime juice, and olive oil. Season with salt and pepper, and refrigerate while you are working on the shrimp.</li>
<li>In a medium bowl mix shrimp with paprika, olive oil, zest and juice of 1 lemon, and minced garlic cloves. Let stand for 10 minutes.</li>
<li>Heat a large skillet on medium heat. Pour enough olive oil to thinly cover the bottom of the skillet and saute shrimp in a single layer for 2 minutes on each side or until the shrimp is opaque all the way through. Lightly season with salt. Depending on the size of your skillet, you may have to do this step in several batches.</li>
<li>Just before serving, add feta and dill to the salad. Divide the salad into 4 bowls and top with shrimp.</li>

<li>Rinse dried peas, then add peas and fresh water (enough to cover peas by 2 inches) to a large pot. </li>
<li>Bring to a boil over medium-high heat, then lower to a simmer and let cook for an hour, checking from time to time to make sure that peas do not stick to the bottom of the pot. Add water if needed to ensure that there is always enough water in the pot to cover the peas. After the hour, and when the peas are still firm but can be easily smashed with a fork, drain in a colander and rinse gently with cold water to keep from cooking further. Set peas aside to drain and cool completely, about 15 minutes.</li>
<li>Place cooled peas in a large salad bowl and add sprouts, feta, green onions, parsley, mint and dill.</li>
<li>In a separate bowl, whisk together olive oil, lemon juice, red wine vinegar, honey, salt and crushed red pepper until slightly creamy. Pour over salad and toss gently. </li>
<li>Sprinkle pomegranate seeds on salad and serve.</li>

<li>Trim ends off asparagus. Wrap asparagus in a damp paper towel, and microwave for 45 seconds. Chop into 2-inch pieces.</li>
<li>To a skillet over medium-high heat, add 2 tablespoons olive oil. Add mushrooms and sauté 4-5 minutes until crispy and brown, stirring occasionally.</li>
<li>Add another tablespoon of oil to skillet, and add chopped garlic and asparagus to the mushrooms; cook, stirring continuously for 1 minute. Remove from heat.</li>
<li>To a large bowl, add asparagus &amp; mushroom mixture, cooked beans, watercress, avocado, lemon juice, and lemon zest; toss gently and serve.</li>

<li>Place soaked beans in a large pot, and cover with water or broth. Add salt and pepper to taste. Bring to a boil; reduce heat and simmer gently, uncovered, stirring occasionally for 1 1/2 hours, until tender, adding more water or broth as necessary.</li>
<li>Drain and refrigerate beans until ready to use.</li>
<li>In a large bowl, combine beans, parsley, tomatoes and garlic. Add olive oil, lemon juice, salt and pepper. Mix well and refrigerate until ready to serve.</li>
<li>Stir in crumbled goat cheese and serve on a large platter. Or, spoon into individual dishes topped with crumbled goat cheese.</li>

<li>To make the dressing, combine olive oil, lime zest, lime juice, chili powder, and garlic in a mason jar. Screw top on jar and shake well till mixed.</li>
<li>In a large bowl, combine cooked black beans, corn, bell pepper, green onions, and cooked quinoa.</li>
<li>Pour dressing over mixture and toss well to coat. Salt and pepper generously to taste. Toss again, and serve at room temperature or chilled.</li>

<li><span class="amount">1 tablespoon</span> <span class="name">balsamic vinegar</span></li>
<li><span class="amount">1 tablespoon</span> <span class="name">Dijon mustard</span></li>
<li><span class="amount">1 tablespoon</span> <span class="name">honey</span></li>
<li><span class="amount">1 tablespoon</span> <span class="name">olive oil</span></li>
<li><span class="amount">1/4 teaspoon</span> <span class="name">salt</span></li>
<li><span class="amount">1/2 cup</span> <span class="name">chopped pecans</span></li>

<ol>
<li>Wash greens and remove any hard stems.</li>
<li>Stack leaves on top of one another, roll tightly the long way, and slice the roll into 1/4-inch thick strips.  Transfer sliced greens to a large glass or metal bowl and set aside.</li>
<li>Combine garlic, vinegar, Dijon, honey, oil and salt in a nonstick skillet.  Heat over high until mixture comes to a boil.  Rapidly boil for 15 seconds, add the pecans and boil 30 seconds more.</li>
<li>Pour the dressing over the greens, place the skillet over the bowl, and allow it to sit for 1 minute to slightly wilt the greens.  Toss salad with tongs.</li>

<ul>

<li><span class="amount">1 1/2 cups</span> dried <span class="name">currants</span></li>
<li><span class="amount">1/3 cup</span> <span class="name">capers</span></li>
<li><span class="amount">1 cup</span> finely chopped <span class="name">red onion</span></li>

<ol>
<li>In a large bowl, whisk together all dressing ingredients and set aside.</li>
<li>Rinse and sort lentils.</li>
<li>Add lentils to a saucepan and cover with water. </li>
<li>Bring to a boil, then reduce heat to a low simmer. Cook for 20-30 minutes, just until tender. Add water as needed to make sure the lentils are just barely covered.</li>
<li>Rinse and drain well, combine with the dressing, and refrigerate overnight.</li>
<li>At least 2 hours before serving, add the currants, capers and onions to the lentils and mix well. Refrigerate two more hours and serve.</li>

<li>Heat water and peas to boiling in 3-quart saucepan. Boil 2 minutes; reduce heat. Cover and simmer until peas are tender, 50 to 60 minutes; drain.</li>
<li>In large bowl, mix cooked peas and remaining ingredients (except 1 hard-boiled egg). Cover and refrigerate 3 hours.</li>

<li>Bring a large pot of salted water to a boil. Add pasta to pot, and cook for 5 minutes, until tender.</li>
<li>Drain pasta in a colander, and rinse with cool water.</li>
<li>Transfer pasta to a large bowl, and add 1 ½ tablespoons olive oil.</li>
<li>In a separate, medium bowl, whisk the remaining 2 tablespoons olive oil with Creole mustard, mayonnaise, red wine vinegar, cane syrup, lemon juice, hot sauce, smoked paprika, Cajun seasoning, salt, and black pepper. If dressing is too thick, add 1 tablespoon of water at a time to thin slightly. Adjust seasonings to taste.</li>
<li>To the pasta in the large bowl, add shallots, tomatoes, bell pepper, celery, black beans, and olives. Toss to combine. Add dressing, and mix until well combined.</li>
<li>Chill for at least 1 hour.</li>
<li>Garnish with optional cooked shrimp or chicken and freshly chopped parsley, and serve.</li>
