Ingredients:

  • 1 package of Camellia Brand Chipotle Black Bean Soup Mix
  • 1 tablespoon of olive oil
  • 2 medium onions, chopped (about 2 cups)
  • 1 medium red bell pepper, chopped (about 1 1/4 cups)
  • 1 quart of chicken broth
  • 3 cups of water

Optional Toppings:

  • Sour cream or plain yogurt
  • Avocado
  • Shredded cheese
  • Cilantro

Directions:

  1. Rinse and inspect beans.
  2. In a large heavy pot, heat oil. Add onions, bell pepper, and 1/3 of enclosed spice packet, and sauté over medium-high heat for 5 minutes, or until vegetables begin to soften.
  3. Transfer the contents of the pot to the slow cooker, as well as rest of spice packet and all remaining ingredients (excluding toppings).
  4. Cook for 8 hours on high or for 12 hours on low.
  5. Garnish with your favorite toppings.

 

Notes:

  • Add water as necessary to obtain desired consistency.
