<h4>Popeye&#8217;s Fried Chicken</h4>
<p>Warren LeRuth, the late, great restaurateur, chef, and oft-time culinary chemist, was brought in by Popeye&#8217;s founder Al Copeland, Sr., in the 1970s to create the chain&#8217;s justifiably famous red beans and rice, the recipe for which is top secret. Cooked until they are a creamy mass with very little texture, the thick, vaguely smoky beans are the standard bearers for many. Served in Styrofoam to-go containers, Popeye&#8217;s red beans are particularly satisfying when enjoyed curbside on a parade route. Since Mother’s cooks its own ham at the restaurant, there’s a lot of leftover ham fat as a result of trimming. <p>The Krewe of Feijao &amp; Green Beans is another colorful off-shoot of the <a href="https://www.camelliabrand.com/the-red-beans-parade/">Red Beans</a> and <a href="https://www.camelliabrand.com/the-dead-beans-parade-a-skeletal-spinoff-of-the-red-beans-parade/">Dead Beans</a> parades, and it debuted back in 2020.</p>
<p>Featuring both a samba-style marching band and a Cajun band, the parade celebrates the diversity of different cultures in the Crescent City, including Cajun and Brazilian culture. The relatively new 70-member krewe is named for the Portuguese word for beans, and their costumes show off intricate designs made with dried beans and rice.</p>
