Red Bean & Goat Cheese Mediterranean Salad

Ingredients:

  • 1 (1-pound) package Camellia Brand Red Kidney Beans
  • Water or vegetable broth to cover beans
  • 1 bunch parsley, chopped
  • 1 1/2 cups red grape tomatoes, halved
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 6 ounces goat cheese, crumbled

Directions:

  1. Rinse beans in a colander. Use the 1-hour Quick Soak method.
  2. Place soaked beans in a large pot, and cover with water or broth. Add salt and pepper to taste. Bring to a boil; reduce heat and simmer gently, uncovered, stirring occasionally for 1 1/2 hours, until tender, adding more water or broth as necessary.
  3. Drain and refrigerate beans until ready to use.
  4. In a large bowl, combine beans, parsley, tomatoes and garlic. Add olive oil, lemon juice, salt and pepper. Mix well and refrigerate until ready to serve.
  5. Stir in crumbled goat cheese and serve on a large platter. Or, spoon into individual dishes topped with crumbled goat cheese.
