Vegan Split Pea Soup

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1 cup chopped onion
  • 1 teaspoon curry powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 cup dry Camellia Brand Yellow Split Peas
  • 4 cups water or milk
  • Salt to taste

Directions:

  1. Rinse and sort peas.
  2. Heat olive oil in a large saucepan. Cook and stir carrot, onion, celery and spices for about 5 minutes.
  3. Add the water, peas and salt.
  4. Simmer, stirring occasionally, for 45 to 50 minutes, or until very thick.
