Veggie Lentils

Ingredients:

  • 1 cup dry Camellia Brand Lentils, sorted and rinsed
  • 3 cups vegetable broth
  • ½ cup chopped green onion
  • ½ cup diced green bell pepper
  • ½ cup diced red bell pepper
  • 1 tablespoon chili powder (adjust to taste)
  • 1 teaspoon ground cumin
  • 4 cloves minced garlic
  • 2 tablespoons red wine vinegar
  • 1 (8-ounce can) tomato sauce
  • 1 tablespoon molasses

Directions:

  1. Rinse and sort beans.
  2. Bring the lentils and broth to a boil, then cover & simmer for 25-30 minutes until soft but not mushy. 
  3. While the lentils cook, sauté the green onion, peppers, garlic, chili powder and cumin in vinegar till the vegetables are limp (about 2 minutes).
  4. Add tomato sauce and molasses, cook for 1 minute (scrape the stuck pieces off the pan), taste, and add more vinegar if needed.
  5. Add mixture to lentils and cook until heated through.
  6. Serve over rice, or as a burrito or taco filling.
