Slow Cooker Baby Limas with Ham

Ingredients:

 

  • 1 (1-pound) package Camellia Brand Baby Lima Beans
  • 2 medium onions, coarsely chopped
  • 1 ham bone (optional: diced ham)
  • 4 cups water, to cover
  • 1 teaspoon Cajun or Creole seasoning blend
  • 1/4 teaspoon freshly ground black pepper
  • Dash cayenne pepper
  • Salt, to taste

Directions:

  1. Rinse and sort beans. (Optional: Soak beans using your preferred method.)
  2. Add beans to slow cooker and top with water, enough to just cover the beans. Stir in the chopped onions and add the ham bone and ham if using.
  3. Cover and cook on high for 4 hours.
  4. Add the Cajun or Creole seasoning, and black and cayenne peppers.
  5. Cover and cook on low for 4 hours, or until very tender.
