Slow Cooker Black Bean and Pumpkin Chili

Ingredients:

  • 3 cups dry Camellia Brand Black Beans
  • 1 yellow onion, chopped
  • 1 yellow bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 2 tablespoons olive oil
  • 4 garlic cloves, finely chopped
  • 4 cups chicken broth
  • 2 1/2 cups cubed, cooked turkey
  • 1 (15-ounce) can solid-pack pumpkin
  • 2 (10-ounce) cans of roasted diced tomatoes and green chilies, undrained
  • 1 (8-ounce) can of tomato sauce
  • 1 teaspoon chili powder
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon kosher salt, or to taste

Directions:

  1. Rinse and sort beans. (Optional: Soak beans using your preferred method.)
  2. In a large skillet, sauté the onion and yellow pepper in oil until tender.
  3. Add garlic; cook 1 minute longer.
  4. Transfer onion, pepper and garlic mixture to slow cooker, and stir in all remaining ingredients.
  5. Cover and cook on low for 8 hours.
