Lil’ Auntie’s Lady Cream Peas
This family favorite was featured on the Lady Cream Peas bag for decades and passed down by Elizabeth Hayward – Gordon Hayward’s wife and 2nd generation bean enthusiast. Elizabeth’s nickname was “Lil’ Auntie”.
- Rinse and sort peas. (Optional: Soak peas using your preferred method.)
- Cover peas with water, add meat or butter, simmer about 1 hour.
- Saute onion and garlic in butter or olive oil, add to pot with remaining ingredients, and cook 1/2 hour or until soft.
- Salt and pepper to taste.
